Total rinse method for microbiological sampling of the internal cavity of eviscerated broiler carcasses.

چکیده
A method is described for spray-rinse sampling the entire visceral cavity of broiler chicken carcasses for microbiological analyses. The method is designed to provide a more comprehensive sample than swabbing or excision of small areas.

Microbiological consequences of skin removal prior to evisceration of broiler carcasses.
The objective of this project was to determine if removal of skin prior to evisceration lowers the number of bacteria that can be recovered by whole carcass rinse or sponge sampling. Four experiments were conducted, two with each type of sampling (rinse or sponge). New York dressed carcasses obtained from a commercial broiler processing plant were aseptically skinned or left with skin intact. T...
متن کاملSampling method and location affect recovery of coliforms and Escherichia coli from broiler carcasses.
Two experiments were conducted, the first to determine whether numbers of recovered bacteria differed due to sampling method used or due to location on carcass sampled (breast or leg quarters) and the second to determine if numbers of bacteria differed between the front (ventral) and back (dorsal) side of the carcass. In both experiments, eviscerated broiler carcasses were obtained from a comme...
متن کاملPresence of Campylobacter inthe respiratory tract of broiler carcasses before and after commercial scalding.
Campylobacter could be detected in the thoraco-abdominal cavity of broiler carcasses even if they were carefully eviscerated by hand with no evidence of intestinal rupture or leakage. If Campylobacter is present in the air sacs, which are unavoidably torn during evisceration, it could contaminate the thoraco-abdominal cavity of the eviscerated carcass. This study was done to determine if Campyl...
متن کاملEffect of external or internal fecal contamination on numbers of bacteria on prechilled broiler carcasses.
During processing, fecal material may contact broiler carcasses externally or internally. A study was conducted to determine the effect of external vs. internal fecal contamination on numbers of bacteria on broiler carcasses. In each of 3 trials, 12 carcasses just prior to evisceration were obtained from a commercial processing plant, placed on a shackle line, and eviscerated with commercial eq...
متن کاملRecovery of bacteria from broiler carcasses rinsed zero and twenty-four hours after immersion chilling.
Microbiological sampling of processed broiler carcasses often relies on the technique of whole-carcass rinsing; however, the rinse sampling is sometimes done immediately after immersion chilling and sometimes as long as 24 h after immersion chilling. To test whether carcass rinses done immediately after chilling can be compared with rinses 24 h after chilling, 20 whole broiler carcasses exiting...
